Munster Melt

Serves 4

Ingredients

1 finely sliced onion
3 medium potatoes
1 Munster cheese
Pepper (to taste)
Salt (to taste)

Method

  1. Pre-boil potatoes till cooked through, allow to cool, and then slice into 1cm pieces.
  2. Using a non-stick pan, fry onion till lightly browned, then add the potato slices.
  3. Cover potatoes with 1cm slabs of Munster cheese.
  4. Cook till the cheese has melted and formed a crust on the pan.
  5. Serve with crusty bread and a glass or two of Gewürztraminer or your favourite wine.
